Sabine studied architecture in Graz, Innsbruck, and Vienna, received her doctorate in 1995 with a dissertation entitled "Programs and Strategies in Architecture," and completed her habilitation in 2003 with the book "Empty Spaces: Living and Femininity in Modernity." Together with Roland Köb, she runs the architecture firm Köb&Pollak Architektur in Wolfurt and Vienna, working in the fields of urban planning, housing, architectural theory, and gender studies. Sabine has taught as a visiting professor at various international universities and, since 2008, has been a professor in the Department of Architecture and Urban Planning at the University of Art and Design Linz.
Alongside Michael Obrist and Lorenzo Romito, Sabine curated 'AGENCY FOR BETTER LIVING' in the Austrian Pavilion at the Biennale Architettura 2025.
